Who hasn’t enjoyed ending a Chinese dinner out withe the fun of opening a fortune cookie? And who knew today was a day to celebrate that? Fortune Cookie Day is today!
Earlier this year I was given a lovely bowl with chopsticks. Last night I decided to fill it up with stir-fry veggies, chicken and rice.
I simply took 3/4 cup of rice and added it to 1 cup of water and cooked it for twenty minutes. While the rice was cooking, I also put three boneless/skinless chicken thighs in a skillet to saute. Once those were thoroughly cooked, I cut into small pieces. I also minced up ginger and garlic that I added to broccoli, carrots and cabbage to stir fry. I used some chicken broth and soy sauce to add flavor. You can see the finished dish in the saute pan here.
Here is the finished dish, which I topped off with sesame seeds and crispy rice noodles.
Once the dinner was eaten, all I had left to do was dishes…..amazing how making a simple dish like this can take so many dishes to make! Clean up wasn’t all that tough and before I knew it, it was done.
