National Chocolate Macaroon Day (2)

Since today is National Chocolate Macaroon Day, I decided to make a small batch using my favorite recipe, which is below.  I only made a dozen because that seemed the best way to control overeating!  😉

Macaroons are basically coconut, egg whites, sugar, vanilla extract and salt.   They are one of my favorite cookies, regardless of whether I bake them or pick them up at a bakery or even buy store-bought boxes.  I do admit to preferring them dipped in dark chocolate as I did with the ones pictured here.  I simply melted a couple squares of dark chocolate and added a few drops of coconut oil to it and then dipped the baked macaroons in the chocolate allowing it to set.   I am keeping the cookies in a container in the frig.

Ingredients

Instructions
  1. Preheat oven to 350. Place a piece of parchment paper on a cookie sheet.
  2. Combine sugar, egg whites, salt and vanilla extract in a bowl. Whisk until frothy.
  3. Add coconut (sweetened or unsweetened, your preference) to the frothed mixture and combine.
  4. Using a cookie scoop or two tablespoons put mixture on cookie sheet. This recipe makes a dozen.
  5. Bake in the preheated 350 degree oven for 15-20 minutes. Remove and cool for a minute and then remove from paper.
  6. You can eat these cookies as is, but I like to add chocolate to the bottom. I do so by putting two squares of dark chocolate into a pan and melting it with a few drops of coconut oil. I then dip the cooled cookies into the chocolate mixture, and put back on the cooling rack with the chocolate side up to set.
