Preheat oven to 350. Place a piece of parchment paper on a cookie sheet.
Combine sugar, egg whites, salt and vanilla extract in a bowl. Whisk until frothy.
Add coconut (sweetened or unsweetened, your preference) to the frothed mixture and combine.
Using a cookie scoop or two tablespoons put mixture on cookie sheet. This recipe makes a dozen.
Bake in the preheated 350 degree oven for 15-20 minutes. Remove and cool for a minute and then remove from paper.
You can eat these cookies as is, but I like to add chocolate to the bottom. I do so by putting two squares of dark chocolate into a pan and melting it with a few drops of coconut oil. I then dip the cooled cookies into the chocolate mixture, and put back on the cooling rack with the chocolate side up to set.
